Both products let somebody approve something on a monday board. The difference is what the approval is about.
In most approval apps, an approval is about an item — a row, whose attachments can be replaced afterwards by anybody, without the approval noticing. In Signoff, an approval is about a specific version of specific files. It records which attachments were on the item at the moment each person decided, and which of them that person actually opened before deciding. Replace one afterwards and the approval reopens and says so.
If nobody in your process ever replaces a file after it has been agreed, that difference is worth nothing to you, and the rest of this page will not change your mind.

We built against that list deliberately, and the first item on it is the reason for the promise about price on our own pricing page. Two of the five complaints are not about software at all — they are about a free tier being withdrawn from people who had already built their process on it.

There are real cases where Approvals for monday.com is the better choice, and pretending otherwise would waste your afternoon rather than ours:

No. An e-signature proves identity to a legal standard, which matters for a contract with somebody outside your company and rarely for an internal approval. Signoff records that a named person agreed to a specific version of a specific file at a specific time. If you need a legally executed signature, use a signature product — and several of them work alongside this one.
Not automatically, and we would not pretend otherwise. Approvals already decided in another app stay where they are; Signoff starts recording from the day you install it. Most teams run the old one until its open approvals are settled and start new ones in Signoff, which takes no migration at all.
Every approval is stored in your own monday account rather than on our servers, so it stays readable whether or not you are a customer, and whether or not we are still here. Any approval also prints as a self-contained document with the record inside it.
No. Anything free on the day you install it stays free on your plan for as long as you are on it. We will not move something you already use behind a higher tier, and we will not turn a free plan into a paid one and keep your work behind it. That promise is in the product, on the screen where the plan is shown, because the loudest complaint against every app in this category is exactly this.
Send one approval, then replace the file underneath it and watch what happens. That takes about four minutes and it is the whole argument.
